Abstract
London catering company Vacherin has signed up to the Sustainable Fish City pledge as part of its commitment to environmental management.
The initiative, which was created by a coalition of conservation and sustainable food organisations, aims to encourage companies in the capital to commit to using sustainable fish breeds as well as raising awareness of over-fishing. Vacherin commercial director Phil Roker said: "We are delighted to support a cause as worthwhile as the Sustainable Fish City initiative. We have had a comprehensive sustainable fish programme at Vacherin for over three years, outlining to our chefs which species to use and which species to avoid according to the Marine Conservation Society's guidelines, so we are delighted to support this new initiative. "Over 80% of our fish is brought from UK waters and we update our policy every month so that we don't buy fish in their spawning season." "We display 'Green Cards' in all of our cafes and restaurants to inform visitors about important environmental issues as well as our sustainable fish policy and other initiatives."
