Abstract
Specialist London catering company Vacherin has revealed the winners of its annual Hot Nosh competition.
The 'Garibaldi' team won both the 'Morning Glory' breakfast and the 'En Voyez' main course categories in the competition.
The team, which was made up of Vacherin staff from insurance company JLT, Whitechapel Gallery and law firm Field Fisher Waterhouse, wowed the judges with their combination of; 'plated fine dining breakfast', 'elderflower, lemon verbena and rhubarb lollie with a breakfast woopee' and 'omlette talleyrand' in the first round.
They won the second round with dishes consisting of; 'house smoked chicken, nectarine and nettle raised pie', 'fennel and broad bean ravioli, pressed tomato terrine with clear juices', 'braised shin of veal, foie gras, trompettes and anna potatoes'.
Vacherin food director Lloyd Mann said: "Hot Nosh never fails to remind us what bright and talented young chefs and kitchen staff we here at Vacherin. I can speak for myself and the rest of the judges when I say that we were absolutely amazed by this year's entries – it was almost impossible to choose a winner!"
Hamish Thorn, general manager at Field Fisher Waterhouse, collected the award on behalf of the team. He said: "I am extremely proud of our fantastic team – David Burt, Mario Golm, Alan Eggleston, Daniela Mihalache, Helena Benge, Michael Paul, Rod Thompson and Johnson Timothy. We put a lot of thought and effort into our dishes and I am delighted that we came out on top."
The Hot Nosh competition, which is now in its 6th year, challenges staff from all 25 Vacherin sites to work together and come up with three innovative recipes. Each round is made up of three stages making nine individual heats. The overall winner is the team with the most points from each stage.
