Abstract
Event and contract Caterer Cleverchefs – covering Wales, the midlands and the south of the UK – has launched a concept called the Land Doughver.

The pizza vans feature a one-tonne pizza oven, large enough for ten pizzas, installed in the back of a Range Rover Defender.

The Land Doughver has already catered for corporate team building days, car launch parties and wedding evenings, as well as a private event for a high-profile American actor. The company is hoping to attend some festivals and large foodie events over the next year.

Nick Collins, managing director of Cleverchefs, said: “Pizza vans are everywhere and in my experience I have found that usually people who start a street food pizza business do not put a big enough oven in to be able to produce a speedy food offering at an event or festival.

“I personally love the Land Rover Defender and realised that its sturdiness could be a suitable home for a huge pizza oven.”

The company used kiln-dried ash wood for the oven as it gives the “perfect smoke and heat needed”. The oven is fixed in the back of the vehicle, which can be driven whilst it is lit.

The company tailors its menu to suit clients. The pizzas regularly served include: whipped goats cheese, ale and onion jam, spinach with a cheesy sauce on a thin base; pepperoni, roquito peppers on a bbq base; and buffalo mozzarella, sun drenched tomatoes and fresh oregano.

Collins added: “I think it’s so important to make food fun. I think there is that fine line between style over substance our approach to all aspects of the Cleverchefs business is to make our customers smile with our presentation or display, be wowed with the flavour of our products or food, then them remember it to tell their friends or family.”
