Abstract
Martin Eshelby, food innovation manager at Bidfood, has unveiled his top five vegan recipes that he believes caterers should be using on their January menus.
Since 2014, Veganuary has been helping people all around the world try a vegan diet through a month-long pledge each January.
Each of the recipes contain an ingredients list, a method and an image of the finished product. The five recipes include:
- Hoisin duck buns
- Mushroom and blue cheese arancini
- Vegan feta salad
- Louisiana style chick’n burger
- Pesto and roasted vegetable tartlet
Veganuary released the results from its 2023 participant survey which found that 78% of participants were planning ‘significant’ diet changes. Almost half (40%) said animals were their number one motivation for trying a vegan diet, followed by personal health (21%) and the environment (18%).
