Abstract
Aramark Northern Europe, the food service provider, has launched a Japanese menu at its catering sites following increased consumer demand.

Aramark is promoting the new Japanese menu at all of its client sites throughout the UK and Ireland, including in the public sector (universities).

Paul Bloxham, culinary director at Aramark Northern Europe, said: “We’ve seen the demand for Japanese food grow steadily in recent years and it has definitely picked up pace in the last few months.

“The appetite for Japanese food and drink is growing every year. But the modern Japanese food-lover is looking for more than just great taste and a traditional food experience – they also demand authenticity and a ‘realness’ in both menu options and how the dishes they order are prepared.

“From a culinary perspective, we’re seeing a steady influx of Japanese cooking techniques and ingredients in our kitchens, and we can expect this to keep growing in the year ahead.”

The Kohyi menu, created in partnership with Unilever Solutions, includes:

  • Chicken katsu with sticky rice.
  • Hanoi pork with sweet and sour noodle soup.
  • Katsu cod with sticky rice.
  • Traditional okonomiyaki pancake – a savoury pancake made from cabbage and meat.

Lawrence Shirazian, managing director, Aramark Food Services UK, added: “At Aramark, we are relentlessly and inherently passionate about good food. We consistently strive to deliver great-tasting and diverse menus that reflect emerging trends and provide our customers with food options they can feel really excited about.

“We won’t ever take a superficial approach to meeting trends; our culinary teams work tirelessly to create menus that meet customer demand but, equally, prioritise authenticity, quality, personalisation and exceptional taste.”
