The desserts aim to give hospital caterers more choice to support patients who are living with dysphagia, a swallowing condition often associated with dementia that results in patients requiring softer foods. The new level 5 desserts are based on traditional favourites including rice pudding, apple sponge and sticky toffee pudding.
The desserts have been developed with both taste and nutritional content at front of mind. Each of the new dishes are gluten free, and the sticky toffee sponge has also been created to cater for those at risk of malnutrition, providing an energy dense option.
