Abstract
Westminster Kingsway College's (WKC) school of hospitality and culinary arts is to hold a series of education seminars for those studying or working in the hospitality industry.
The seminars, entitled Game Recognition and Preparation, are masterclasses in different species of wild game available to chefs in the UK. They will be taking place on the 24 November and 29 January 2009 at the WKC. Jose Souto, college chef lecturer and game expert, will be hosting both classes. He will bring together examples of all types of game as well as giving an insight into where game can be found, what they eat and what makes them special for British menus. Souto said: "People are now eating more game than ever because of the work of organisations like The Countryside Alliance and Game to Eat, who are promoting game as an easily useable and readily available commodity. The UK Game Company which sponsors the seminars has worked with many of our main supermarkets and chefs to provide top quality game at an affordable price. Their work specification, preparation and handling of game has now made it a commodity easily accessible to everyone." He added: "It is really important to give chefs an insight into this special commodity which is one of our only remaining seasonal foods. When student chefs from Westminster Kingsway College go into the workplace, we would like them to include British seasonal game on their menus." The cost of the game seminar is £60 per person which includes full day of lectures, lunch in the college's Vincent Rooms and a colour copy of a booklet written by Jose Souto on Game preparation and Identification. Previous game seminars have been attended by top chefs from the House of Commons, The Park Lane and The Landmark hotels, as well as other restaurants and hotels in the UK.
