Abstract
A new show feature will be Cost Sector Catering Live, a mix of cookery demos and presentations highlighting the often unsung work of the high-volume catering sector and brought to you by Cost Sector Catering.
Alan Dewberry, chairman of the magazine's publishing company Dewberry Redpoint, says: "The aim will be to educate visitors and suppliers about the considerations those working within cost sector have to face from both a broad business perspective to everyday menu decisions and delivering the end product." "Each day will focus on one public sector discipline and now we have established a schedule with an interesting format for the industry. Leading lights from a number of catering bodies will give a practical demonstration in the kitchen area, showcasing the chefs' skills." Ministry of Defence experts will kick off on Sunday with topics including Army operational rations; ship and submarine demands; and in-flight restrictions. On Monday contract caterers scheduled to take part include Elior, Aramark, Compass, Sodexho and BaxterStorey. The Tuesday slot is being taken by The University Catering Organisation (TUCO) and other College and Higher Education officials while on Wednesday the Local Authority Caterers' Association (LACA) will feature the School Chef of the Year winner. The following afternoon session is dedicated to a presentation by HM Prison Catering Service, with two catering managers Paul Woolston of HMP Swaleside and Derek Edwards of HMP YOI Huntercombe giving presentations. They will show a typical prison food offering but also showcasing the skill set of their chefs, giving a fine dining 'spin' on an 'inside' meal. Thursdays is reserved for healthcare with the debate led by the National Association the Hospital Catering Association. A further new feature will be up-to-the minute news stories – from the show and nationally – collated on the site by Cost Sector Catering journalists and displayed on large plasma screens for viewing by visitors.
