Abstract
Westminster Kingsway College will be working with the Office of Commercial Affairs, Royal Thai Embassy on behalf of the Department of International Trade Promotion (DITP) and the Ministry of Commerce, to create a Thai tasting menu for guests in the lead up to Thai New Year (Songkran).

The themed menu will be available in the college’ Escoffier restaurant from the 2 – 5 April in time for the New Year celebrations to commence on the 13 April.

Westminster Kingsway College chef lecturer and author, Jose Souto, said: “We see ourselves to be at the cutting edge of teaching when it comes to the world of culinary arts.

“We ensure that all our students have the chance to experience products from around the world and to have an understanding about the cultures that surround these products; this is why we are happy to be working with the DITP on our ‘Thai Week’.

“The menu will celebrate a modern take on Thai food, conceived by the senior chef lecture sand our students.”

Students have spent the last few weeks researching Thai cuisine and have come up with a 7-course tasting menu based on their knowledge. A ‘Train the Trainer’ session was also held at the college, where Thai chefs put on demonstrations and talks for the chef lecturers.

The activity is part of a wider campaign to promote Thai cuisine in the UK and encourage collaboration between the young chefs in the UK and the top Thai chefs around the world.
