British menus gain worldwide influence – Horizons’ survey reveals
Abstract
Dishes from the Middle East, Mediterranean and Vietnamese cuisines are having a strong influence on the foods sold by high street operators in a bid to offer customers something different.

The last Menu Trends report from foodservice consultancy Horizons, has revealed that British menus are picking up on trends such as wheat-free and quinoa, which features at Leon, Nando’s and O’Neils.

Horizons’ analyst Nicola Knight, said: “Many of these trends have been picked up and adapted from street vendors and small independent operators, particularly the more innovative, easy-to-eat hand-held dishes.

“It’s clear that operators are working hard to offer customers something new and interesting, often including so-called super-food ingredients which satisfy diners keen to eat healthily.”

Bella Italia, Zizzi and Revolution all have dishes on their menus containing popping candy, which seems to have hit the mainsteam in sweet and savoury versions, including a burger.

Meanwhile, beef burgers are up 41% since summer 2014 and rib eye and fillet steaks have risen in popularity despite the rise in price and decrease in weight. Chicken burgers and vegetable burgers are up 73% and 20% respectively year-on-year.
