Long Clawson Dairy, producers of ‘award-winning stilton’, has launched stilton crumb for foodservice.

Long Clawson is one of only six dairies in the world permitted to make stilton and one of the oldest farmers’ cooperatives in the UK. It is 100% British owned and relies on milk from 43 local farms in Leicestershire, Nottinghamshire and Derbyshire.

The stilton cheese crumb is made by cheesemakers who began crafting cheese over 100 years ago. Each stilton is individually graded, hand-selected for ‘quality’ and hand-turned daily.

Chefs and caterers can add the stilton crumb to many of their dishes. It is less wasteful because the consistency of the crumb size makes it easier to control portion sizes.

The stilton cheese has a shelf life of 28 days and it can be used fresh in salads, as a topping in sandwiches and  in cooking.

There is also the Long Clawson’s 100% blue stilton cheese that is usually discarded by kitchens. It can be used in pies, pasta and soups and has a shelf life of 90 days in an attempt to reduce food waste.
